Decadent Chocolate Muffins

These muffins are truly rich,chocolatey and decadent. If you want a chocolate overload then this is a winner. There is nothing healthy about them but the flavour makes up for it. The muffins turned out perfectly and had a nice dense bite to them.

Ingredients:-

2 eggs

2 teaspoons vanilla extract

100 gms butter melted and cooled

1 cup buttermilk( I used the Amul tetrapack) 200 ml

1 3/4 cups maida flour/ refined flour

2/3 cup cocoa powder

1 cup brown sugar

1/4 cup white sugar powdered

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

110 gms milk chocolate cut into chunks

Procedure:-

Line a muffin pan with liners and heat oven to 180C. I got a total of 14 muffins.

Melt the butter and let it cool.

Whisk together the eggs,buttermilk and vanilla extract.

In a large bowl, whisk together all the dry ingredients. The flour,cocoa powder,brown sugar,powdered white sugar,baking soda,baking powder and salt. Stir all the ingredients together till well combined.

Add the wet ingredients to the dry mixture and add the melted butter and chocolate chips in. Reserve some chocolate chips for the topping. Mix with a spatula or spoon till just combined. It doesn’t matter if the batter remains lumpy…thats good!

Fill each muffin case till 3/4 full and add a few chocolate chunks to the top. Bake at 180C for 12-15 minutes on the middle rack.

Healthy banana muffins without butter/oil

I have been on a muffin kick lately and have been searching for healthier muffin recipes to try and I came across a banana muffin recipe and decided to modify it a bit!

I went a little overboard on the mashed bananas and used 4 instead of 2 or 3 and threw in cranberries,walnuts and oats for good measure(health).

It resulted in a perfect tasting banana muffin. The cranberries added a lovely tartness and the muffin was quite moist and not too sweet.

Ingredients:-

4 medium bananas

150gms yogurt/curd (1/2 cup)

2 eggs

2 tsp vanilla extract

3/4 cup dark brown sugar

1 and 1/2 cups maida/plain flour

1/2 tsp cinnamon powder

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

1/2 cup oats( Quaker instant oats)

1/2 cup cranberries

1/2 cup chopped walnuts

Procedure:-

  1. In a bowl add the flour, baking soda,baking powder and salt and stir till well combined.
  2. Mash the bananas and add the curd to it and mix well.
  3. Mix in the brown sugar and cinnamon.
  4. Then add the eggs and vanilla extract and mix well on medium speed for two minutes.
  5. Add the dry ingredients to the wet ingredients and stir till just combined. Do not overmix. The batter will be lumpy and a lumpy batter makes for the best muffins.
  6. Finally stir in the oats,cranberries and walnuts.
  7. I got around 16 muffins that I filled to about 3/4 full each.
  8. Bake for 12-15 minutes at 180C or till done.

Lemon Bundt Cake

This is one cake that you cant mess up and is perfect if your trying to bake a cake for the first time. This is the one you need to start with! Not only is it simple and easy to make but it is super delicious and looks enticing like you’ve been slaving away for hours to create something looking so pretty.

Ingredients:-

Maida flour/ All purpose flour – 1 1/4 cup

Sugar- 3/4 cup

Eggs-2

baking powder- 1 tsp

baking soda- 1/2 tsp

Yogurt- 3 tbsp

Butter- 100 gms

lemon juice- juice of 1 and 1/2 lime ( 2 tbsp)

lemon zest- zest of 2 limes

1 tsp vanilla extract/essence

1/4 tsp salt

For Citrus Lemon Icing:-

1 cup icing sugar

lemon juice- 1 1/2 tsp

lemon zest-1 tsp

milk- 1 tbsp of adjust it

Procedure:-

  1. Preheat the oven to 180 degree C. Butter a bundt pan and dust it with flour.
  2. Take flour, baking soda, salt and baking powder in a sieve and sift it.
  3. Take butter,sugar and vanilla in a bowl and beat it till it becomes light and fluffy. Around 8 minutes.
  4. Add in eggs and beat it well on medium speed for another 5-7 minutes till its pale.
  5. Add in the lime juice, zest and yogurt and beat it for another minute.
  6. And in the flour mixture and fold it in with a spatula or beat on low speed for 30 seconds till just combined.
  7. Pour this into the tin and bake for 40-45 minutes till the cake is done..insert a skewer and check. The cake should leave the side. When it cools invert it into a plate, it should come out easily.
  8. Prepare the icing mixing in the sugar, lime juice and milk a little at a time till you reach the desired consistency. I mixed this in with a spoon. It takes a bit of work to incorporate it in the beginning but then with the addition of a tsp of milk at a time it all comes together.
  9. Once the cake is completely cooled, drizzle the icing on the cake and sprinkle the lemon zest on top
  10. Ta-da, its ready to be devoured!

Spoon mixture into prepared cake tin and bake at 180C for 40-45 minutes until a skewer inserted comes out clean

When the cake is inverted into a plate and has completely cooled down start preparing the icing. Mix icing sugar with lemon juice and mix. Then add milk a little at a time

Best ever Oatmeal Cookies

On my cookie craving, I came across this recipe on the bigger bolder baking site and decided to try it. I substituted cranberries instead of raisins because that’s what I had on hand. These turned out delicious and they were absolutely spot on! I altered the measurement of sugar and it was just right.

Ingredients

1/2 cup butter room temperature(100 gms)

3/4 cup brown sugar

2 tbsp white sugar

1 tsp vanilla

1 egg

3/4 cup maida flour(white flour)

1 teaspoon cinnamon

1/2 tsp salt(skip salt if using salted butter)

1/2 tsp baking soda

1 1/2 cups oats

1/2 cup cranberries

Procedure

  1. Preheat oven to 180C. Line a cookie sheet with parchment paper and set aside.
  2. Combine the flour, salt, cinnamon and baking soda.
  3. In a large bowl cream together the butter,white and brown sugar.Once light and fluffy add in the egg and vanilla and whip well until combined.
  4. Fold in the dry ingredients with a spatula. Do not overmix.
  5. Fold in the oats and raisins.
  6. No need to chill in the fridge
  7. Using a tablespoon measure scooped heaped tablespoons of the cookie dough on the lined baking sheet leaving space between each cookie.
  8. Bake for 15-20 minutes. Check after 10 minutes as every oven temperature is different. They should be slightly soft in the middle.
  9. Allow to cool before eating!
  10. Store in an airtight container for 2-3 days at room temperature.

Ingredients:-

1 and 1/2 cup oats powdered

1 tsp baking soda

1/2 tsp baking powder

1/4 cup cranberries

1/4 cup walnuts finely chopped

pinch of salt

2 bananas mashed

4 tbsp honey

2 tsp vanilla

2 eggs

1/2 cup yogurt/curd

1 tsp cinnamon powder

(makes around 24-26 mini muffins)

Procedure

  1. Preheat oven to 180C.
  2. Combine all the dry ingredients together. Powdered oats,baking soda,baking powder, pinch of salt,cinnamon,cranberries and walnuts.
  3. Mash bananas.
  4. Whisk together the eggs,vanilla,honey,mashed bananas and curd.
  5. Combine the wet and dry ingredients together. Stir well
  6. Divide equally into the muffins tray. Here I used a tbsp of batter for each muffin mould.
  7. Bake at 180C for 20-25 minutes. Here I checked it at the 20 minute mark and baked for another 7-8 minutes because my oven runs a little low.

White Chocolate Chip cookies

After making the yummy chocolate chip cookies that I posted on my blog, I was on the hunt for some more delicious cookie recipes and I decided to try out these white chocolate chip cookies I came across. The title of this post is aptly named ‘the best white chocolate chip cookies’.

These cookies have a wonderful almost toffee, caramelized,milky flavor to them. It reminds me very much of the milk toffee sweets made for Christmas.

The cookie dough is not very firm like normal cookie dough, its more like a thick cake batter. I baked some straight away and some I chilled for a few hours before baking and it didn’t really make a difference.

Both methods turned out equally delicious. These do spread out quite a bit though so I recommend keeping quite a bit of space between each cookie before baking.

I cut down the recipe to half because I didn’t want to make a big batch.

Ingredients:-

1/2 cup butter,room temperature

1/2 cup brown caramelized sugar

1/4 cup granulated sugar that I then ground down to a powder

1 egg

1 tablespoon vanilla extract

1/2 tsp salt

1/2 tsp baking soda

1/4 tsp baking powder

1 1/4 cup flour

200 gms of white chocolate that I chopped into chunks

Procedure:

  1. Preheat oven to 180’C
  2. Cream together the butter and both sugars for 2-3 minutes on medium speed.
  3. Add in the egg and vanilla essence and further beat on medium speed for 5 minutes.
  4. Add in the flour, baking soda,baking powder and salt and beat on low speed till incorporated.
  5. Beat in the white chocolate chunks for a minute.
  6. Take 2 tbsp size balls of cookie dough and place them on a baking sheet and keep quite a bit of space between each cookie.
  7. I then placed them in the fridge for 3-4 hours to set. I baked a couple immediately and they turned out quite well. Keeping the dough in the fridge is not necessary.
  8. I baked them for 15 minutes at 180’c. Please check your cookies after the 10 minute mark as everyone’s oven temperatures differ. I had to keep mine in for longer.
  9. Set aside to cool. These get a lovely golden color and are chewy in the inside.

Place the cookies on a baking sheet. Here I used foil. Keep quite a bit of space between each cookie as these do tend to spread quite a bit. I didn’t do so and ended up with my cookies sticking to each other

This is how they turned out. I didn’t keep enough space between each cookie and it ended up sticking to one another. This doesn’t detract from the deliciousness of each cookie though!

 

 

 

Best ever banana bread

I had some bananas left over and while wondering what to do with them, I decided to try me some banana bread.

So after looking up a few recipes online I came across this one from a site called baker chick.

It was a simple recipe with no additions, but it was absolutely delicious. This is one of those go to recipes that once you try you will come back to it again and again. I followed the recipe to the T except that I added half the quantity of white sugar as I didn’t want my banana bread to be too sweet. The next time I try it, I would definitely add some cinnamon and throw in some walnuts as well.

Ingredients:

100 gms melted butter(salted)

1/4 cup white sugar

1/2 cup brown(demerara) sugar

2 eggs

2 tsp vanilla essence

1 and 1/2 cups maida flour(white flour)

1 tsp baking soda

1/4 tsp salt

200 gms curd or yogurt

3 ripe bananas mashed.

Bake for 25 minutes at 180’c in a 9 X 13 inch baking tray. Preheat oven to 180’C for 10 minutes.

I started off by melting butter and adding it to the white  and brown sugar and whisking it well.

I then added the 2 tsps of vanilla extract and mixed in the eggs one at a time stirring well after each addition.

Add the flour, baking soda and salt and stir to mix until just combined. Do not overmix.

Delicious Chocolate Chip Cookies

After watching loads of videos of chocolate chip cookies, it comes as no surprise that I wished I could jump through my pc screen and gobble some of them straight up!

So I decided to hunt through loads of recipes to find a good one and I came across a recipe with the title

‘BEST CHOCOLATE CHIP COOKIE RECIPE(SERIOUSLY)’

and its the seriously that pulled me in. I decided to bake these and they were seriously awesome!

Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 1/3 cup (66 g) granulated sugar
  • 1/2 cup (104g) regular brown sugar, packed
  • 1 large egg
  • 1 teaspoon (5ml) vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups (186g) all-purpose flour(I used maida flour)
  • 1 1/2 cups (255g) chocolate chips (semi-sweet or milk)( I used 4 52 gms packets of cadbury dairy milk cut into chunks)

I started by melting my butter.

I then added 1/2 cup of brown sugar(packed) and 1/3rd cup of granulated sugar and beat it well.

To this I added an egg and a tsp of vanilla.

Add 1/2 tsp of baking soda and 1/2 tsp of salt. Beat this well, and then add 1 and a half cup of maida flour. Do not overmix the flour.

Fold in the chocolate chunks.

Make it into rounds of around two tbsp each and cover in cling film to chill. I chilled the dough for 6 hours. It is imperative that you chill the dough.

I baked the cookies at 180 degrees C for 20 minutes. Every ovens temperature is different so I recommend checking after 12 minutes. Allow to cool for atleast 15 minutes before taking a bite. The inside should be slightly soft and chewy.
